  • Energy Plan

    Daily
    Kara believes strongly in ritual and has certain times that she does things. One of the things she does consistently every day is to mediate. She does a lot of writing and songwriting in the morning, has lunch and then meditates for an hour.

    She really enjoys ‘brain syncing’ which allows her to tap into a theta wave state (see links to her favorite tools in the Little Pink Notebook section below.)

    She also walks daily (having a dog helps!), does yoga three times a week and eats very healthy.

    Recharge
    If she’s really exhausted she will listen to a brain sync recording that helps her go into a delta state for complete rejuvenation. Kara also gets offline, sleeps and eats good food!

    Business Fun
    Kara is having fun with a Kindle challenge and is going to Rome, Italy finishing a huge project producing her original songs with a full symphonic orchestra which will be out in 2015 and she’s also setting up her first online group program.

    Business Vision
    Kara did a concert in Berlin where she worked with the audience to open their voices. Listen as Kara explains how the participants literally gave voice to their dreams and desires.

    This is one of Kara’s favorite recipes and Kara explains how to make it below in her own words. She includes directions for a vegetarian version as well…

    Celery Root Schnitzel (Vegetarian)

    I adore celery root schnitzel. It is a comfort food. Classic Wiener schnitzel uses veal that has been pounded, breaded and fried to a crispy golden brown.

    I prefer vegetables, and celery root is perfect (some call it celeriac, celery knob or knob celery.)
    This vegetarian version features celery root slices that have been blanched to tenderness before getting the same treatment.

    Serves 6 as an appetizer or 3 as a main dish. Feel free to double and triple the recipe depending on how many guests join you.

    Ingredients –

    1 large celery root, 10-12 ounces
    2 large eggs, beaten
    1/2 cup all purpose flour or substitute ground almonds or hazelnuts
    1 cup breadcrumbs or substitute rice flakes
    Sea salt and freshly ground black pepper
    Fresh herbs – for example rosemary or parsley

    To Make –

    Fill a 2 quart pot with water and 2 tablespoons sea salt and bring to boil.
    Peel celery root carefully with a paring knife.
    Slice peeled celery root onto approximately 3/8 inch think round slices.
    Blanch in boiling water for 3 – 5 minutes and drain in colander.
    Allow to cool before proceeding with recipe.

    Place flour or ground nuts in a shallow dish.
    Place breadcrumbs or rice flakes  in a second round shallow dish.
    Place beaten eggs with fresh herbs in a third shallow dish.

    Spread steamed celery slices out on a cutting board.
    Season both sides with salt and pepper.
    Dredge each slice in the four ( or ground nuts).
    Dip in egg mixture.
    Finally coat with breadcrumbs or rice flakes.
    Heat a cast iron griddle to medium.
    Cover bottom of griddle with a thin layer of ghee or clarified butter. ( or good vegetable oil)
    Fry 3 or 4 minutes on each side or until golden brown.
    Drain on paper towel and serve with a wedge of lemon.

    Variation –

    Try Kohlrabi Schnitzel. Simply substitute Kohlrabi for celery root.

    Kara’s notes:

    Celery Root Schnitzel is best served with mashed potatoes and a big salad.

    I like making extra and eating it cold for lunch on the days following.

    The classic version is with flour and bread crumbs. I personally eat very little gluten. I have no allergies, I simply feel lighter when I leave out bread and flour. So I often substitute the breading with ground almonds, rice flakes, or you can use other gluten free flour like chestnut or even cornmeal.
